We take our Cascadia Pale malt, then cold smoke it on alderwood after kilning. Targeting 2.2-2.6L color and 5-8ppm phenol.

CHEWING: The hull is bitter and smokey upfront like damp wood in a campfire or smouldering embers. This dissipates quickly as the starch and sweetness come through like a sugar crusted Liege waffle. Marionberry or huckleberry provide fruitiness to the profile as the smoke lingers low-key in the background like a burn pile in the countryside. Overall, the Cascadia Alder Smoke is reminiscent of maple glazed smoked salmon.

STEEPING: Starting off sweet with a touch of bitterness from the smoke, the flavor profile moves seamlessly to the middle where citrus peel and berry shine. The smoke remains faint in the background but with the familiarity of smoked salmon or oysters. The finish is where the smoke finally breaks out, bursting on the breath, and stays for the aftertaste.
